Kathy Gunst’s Potatoes Gratin This dish qualifies as the ultimate comfort food: thinly sliced potatoes layered with thin shavings of Parmesan cheese, topped with milk and cream, and then baked until tender and golden brown. Ingredients 1 tablespoon olive oil 12 to 13 medium-sized potatoes (4 pounds) Salt and freshly ground black pepper 4 tablespoons butter, cut into small cubes 3 tablespoons flour 1 tablespoon finely chopped fresh rosemary 1 tablespoon finely chopped fresh thyme 2 cups grated Parmesan cheese 3/4 cup whole milk 3/4 cup heavy cream Directions 1. Preheat the oven to 400 degrees. Peel and thinly slice the potatoes and cut the butter into small cubes. Grease the bottom of a large gratin dish (about 14 inches long, 2 inches deep and 9 inches wide) with the oil. You can also use a large, ovenproof skillet or a large broiler pan. 2. The Gratin is assembled in two halves. Arrange half the potatoes in a single layer on the bottom of the pan. Sprinkle with salt and pepper, half the butter, half the flour, and half the rosemary and thyme. Scatter with half the grated Parmesan. Top with the remaining potatoes, creating a neat layer of overlapping slices. 3. Season with salt and pepper, dot with the remaining butter and sprinkle with the remaining flour and herbs. Place the remaining cheese on top and pour the milk and cream over the whole thing. The potatoes can be covered and refrigerated for up to 2 hours ahead of time before baking. 4. Bake the gratin on the middle rack for about 45 minutes. If the potatoes seem to be getting overly brown, cover loosely with foil. Reduce the heat to 300 degrees and bake another 30 to 45 minutes.
